ecoVINO says: Extremely drinkable light red wine that is great when served lightly chilled. This is a really fresh and fruity Valpolicella DOC wine which offers a good level of complexity and is really nicely balanced. This very easy-drinking red wine can be enjoyed with or without food with your family and friends.
Aroma: Medium intensity with delicate fragrant aromas of fresh black and red cherries. Floral overtones with hints of spice - in particular cinnamon, nutmeg and pepper.
Taste: Dry with medium acidity and tannins. Light-bodied with medium alcohol and finish. Lots of light yet tangy red fruit flavours - particularly zesty cherry - which lingers on the finish. This is a very moreish and easy-drinking wine.
Food pairing: Fantastic as an aperitif alongside a few savoury snacks or with appetizers and light dishes. This red wine also pairs really well with light Asian dishes and dim sum.
Open: No decanting required.
Service temperature: Lightly chilled or at a low room temperature (13 to 18 degrees Celsius).
Winemaking process: Grapes are carefully handpicked. After de-stemming and soft crushing the grapes, delestage fermentation is carried out at a controlled temperature in stainless steel tanks and for 7 to 8 days in oak truncated cone-shaped vats. Wine is transferred to stainless steel tanks for malolactic fermentation. Through a process known as Bâtonnage, the settled lees are then stirred back through the wine. Maturation for 10 months in stainless steel tanks and for a further 2 months inside the bottle.
