ecoVINO says: This elegant Super Tuscan is the most prestigious Bolgheri DOC red wine from the Chiappini winery. This is a bold and full-bodied wine produced from a blend of Cabernet Sauvignon (70%), Merlot (20%) and Cabernet Franc (10%) grapes. This wine is a Bolgheri Superiore and has outstanding structure, balance and intensity. This wine is soft and smooth on the finish and extremely drinkable now. If stored properly, the wine will further develop with excellent long-term (at least 15 years) ageing potential.
Aroma: Pronounced aromas of ripe red and black fruits - particularly cherry, plum, redcurrant, cranberry, blackberry and blueberry – with notes of vanilla, cedar, smoke, caramel and white pepper.
Taste: Dry with medium-to-high acidity. Full bodied with high alcohol and high tannins. Opens with pronounced flavours of red and black fruits - particularly cherry, plum, cranberry and blackberry - with overtones of tobacco, cedar, oak, cinnamon and liquorice. Wonderfully smooth long finish.
Open: To fully appreciate the complexity of the wine, best to decant at least 2 hours before service.
Service temperature: Room temperature (18 degrees Celsius).
Food pairing: Best paired in combination with hearty richly-flavoured dishes.
Wine-making process: Grapes are handpicked in September from Chiappini’s oldest and best vineyards (Grottine and Macchia). Each grape varietal is vinified separately. The initial alcoholic fermentation occurs in open vats at controlled temperatures of between 26 to 30 degrees Celsius for 7 days, with manual punching down, to avoid stressing the grape skins. Each grape varietal is then separately macerated in stainless steel tanks for 15 days at a controlled temperature. After fermentation, each grape varietal continues to remain separated and unfiltered to retain elegance. The wine is then transferred to small oak barrels (70% first use and the rest second use) for maturation. After 12 months of maturation, the grape varietals are blended together and then reintroduced to the small oak barrels for a further 6 to 8 months prior to bottling. Refinement continues inside the bottle for a further 12 months.
