ecoVINO says:  This smooth medium-to-full bodied Super Tuscan red wine from the world-renowned Bolgheri DOC winemaking region, is produced from a blend of Cabernet Sauvignon (50%), Merlot (40%) and Cabernet Franc (10%) grapes. This is an intensely robust wine with a high alcohol content, wonderful aroma characteristics, excellent structure and great balance. Although the wine is drinkable now, it will further improve and evolve over the long-term (best to drink before 2028).

Aroma:  Pronounced aromas of delicious ripe black fruits - particularly blackcurrant, cherry and blackberry – with evident notes of cloves, coffee, dark chocolate and smoke. Hints of tobacco and wet leaves are also present.

Taste:  Dry with medium-to-high acidity, tannins and finish. Medium-to-full bodied with high alcohol. Opens with prominent black fruit flavours - particularly plum, blackcurrant, cherry - with hints of red plum and cranberry. Closes with notes of cedar, cloves, charred wood and a hint of caramel.

Open:  To fully appreciate the complexity of the wine, best to decant at least 2 hours before service.

Service temperature:  Room temperature (18 degrees Celsius).

Food pairing:  Best paired in combination with hearty richly-flavoured dishes.

Wine-making process:  Grapes are handpicked in September. Each grape varietal is separately macerated in stainless steel tanks for 8 to 10 days at a controlled temperature of between 22 to 28 degrees Celsius. After fermentation, each grape varietal continues to remain separated and unfiltered to retain elegance. The wine is then transferred to aged small oak barrels for maturation. After 8 to 9 months of maturation, the grape varietals are blended together and then reintroduced to the aged small oak barrels for a further 3 to 4 months prior to bottling. Refinement continues inside the bottle for a further 5 months.

Allergens:  Minimal naturally-occurring sulphites lower than EU organic wine production requirements.
