ecoVINO says: This delicious blend of grapes is unique to Villa Merighi, resulting in a very soft, well-balanced and structured herbaceous red wine. Best to drink now (or before 2025) alongside a meal with your family and friends.
Aroma: Aromas of black cherry, dried fruits (prune and sultana) blackberry and blackcurrant, with subtle hints of red cherry, undergrowth, tomato leaf, nutmeg and dark cacao.
Taste: Off-dry with medium acidity. Medium bodied with medium alcohol and a very smooth finish. Opens with delightful smooth red fruit flavours - particularly cranberry, red cherry, raspberry and redcurrant, with subtle hints of undergrowth, cloves, liquorice and cacao.
Open: To fully appreciate the complexity of the wine, best to decant 1 hour before service.
Service temperature: Low room temperature (16 to 18 degrees Celsius).
Food pairing: Best paired in combination with structured and savoury dishes. This smooth wine also pairs well with stronger flavours and spicy Asian dishes.
Wine-making process: Grapes are handpicked at optimal ripeness. Marzemino and Corvina grapes are dried naturally for 1 month before the wine-making process begins. Each grape varietal is separately macerated in stainless steel tanks for 10 days and continues malolactic fermentation at controlled temperatures of 22 to 25 degrees Celsius. After fermentation, wine is blended together. Maturation continues in stainless steel tanks prior to bottling. Refinement continues inside the bottle for a further 12 months.
