ecoVINO says: This is a really elegant and fresh-tasting, light-to-medium bodied off-dry Tuscan white wine. This fabulous wine is made using only Vermentino grapes from the famous Bolgheri DOC winemaking region. This wine is very well-balanced and expresses delightful minerality, spice and typical notes of sage and acacia flowers that are common characteristics of this grape variety. Great to drink now (or before the end of 2024) as an aperitif or will pair really nicely with risotto or delicately fragranced Mediterranean style dishes.
Aroma: Delectable floral aromas of acacia and honeysuckle alongside aromas of green melon and gooseberry. Delightful and evident herbal notes of sage, fennel and dried herbs with hints of white pepper.
Taste: Off-dry with medium acidity. Light-to medium bodied with medium alcohol and a lovely finish. This is a very unique white wine that exudes lots of minerality and opens with flavours of yellow and pink grapefruit and hints of lime zest. Evident herbal and herbaceous notes - particularly sage, grass, green bell pepper and tomato leaf are apparent on the finish.
Open: No decanting required.
Service temperature: Lightly chilled (10 to 13 degrees Celsius).
Food pairing: Great as an aperitif alongside a few savoury snacks, or with low-fat and delicately fragranced grilled / barbecued dishes and creamy sauces. This wine pairs very well with Mediterranean dishes such as risotto and pasta or fresh-tasting Southeast Asian style dishes.
Wine-making process: Grapes are handpicked in September. Fermentation is carried out in stainless steel tanks at a controlled temperature. Maturation for 5 months in stainless steel tanks prior to bottling.
Allergens: Minimal naturally-occurring sulphites lower than EU organic wine production requirements.
