ecoVINO says:  The winemaker has named this wine ‘sabia’, which means ‘sand’ in Italian - this refers to the terroir of the vineyards that rest on calcareous clay, interspersed with gravelly rocks and sand – which in turn provide lots of minerality to the overall flavour of this dry white wine. This fresh-tasting medium bodied white wine is made using only Garganega grapes, is well-balanced and very easy to drink. Best to drink now (or before the end of 2024) as an aperitif, or with a light meal with your family and friends.

Aroma:  Delectable aromas of white flowers (jasmine and elderflower), almonds and tropical fruit – particularly banana, passion fruit and green melon - with hints of wet stone in the background.

Taste:  Off-dry with medium-to-high acidity. Medium bodied with medium-to-high alcohol and a lingering finish. This interesting white wine exudes lots of minerality and opens with flavours of almonds, jasmine, sweet juicy pears and cantaloupe melons. There are also some herbaceous notes - particularly tomato leaf – and subtle hints of white pepper on the finish.

Open:  No decanting required.

Service temperature:  Well chilled (6 to 8 degrees Celsius).

Food pairing:  Great as an aperitif alongside a few savoury snacks, or with low-fat and fresh-tasting dishes and sauces. This wine also pairs very well with risotto and delicate Southeast Asian dishes.

Wine-making process:  Grapes are handpicked at optimal ripeness and fermented in stainless steel tanks at a controlled temperature.  Prior to bottling, the wine is kept in contact with the lees for 10 months, resulting in a medium-bodied white wine.

Allergens:  Minimal naturally-occurring sulphites lower than EU organic wine production requirements.
