ecoVINO says:  This is the most prestigious Amarone DOCG wine from the Novaia winery. This high alcohol full-bodied red wine has great structure, balance and intensity. The wine is lovely and smooth on the palate and extremely drinkable now. If stored properly, the wine will age until at least 2030.

Aroma:  Lovely pronounced aromas of ripe red fruits - particularly red cherry, cranberry, redcurrant and strawberry - with evident overtones of spice and cherry jam. Secondary and tertiary aromas include smoke, dark chocolate, coffee and tobacco.

Taste:  Warm and dry with medium acidity and medium-to-high tannins. A velvety and well-rounded Amarone with high alcohol and a medium-to-long finish. Opens with prominent red fruit flavours, in keeping with the wines aroma profile, and closes with subtle herbaceous overtones and hints of spice and cedar on the finish.

Food pairing:  Best paired in combination with richly-flavoured savoury dishes.

Open:  To fully appreciate the complexity of this wine, best to decant at least 2 hours before serving.

Service temperature:  Room temperature (18 degrees Celsius).

Winemaking process:  Grapes are carefully handpicked from the hilly south/south-east facing ‘Le Balze’ vineyard which is 300m above sea level and rests on calcareous clay. The grapes are dried naturally for about 100 days (appassimento method). After de-stemming and soft crushing the grapes, delestage fermentation is carried out at a controlled temperature in oak truncated cone-shaped vats for about 30 days - including a 10 day cold pre-fermentative maceration on grape marcs. Wine is transferred to wooden barrels for malolactic fermentation. Through a process known as Bâtonnage, the settled lees are then stirred back through the wine. Maturation for 36 months in wooden barrels and for a further 12 months inside the bottle.

Allergens:  Minimal naturally-occurring sulphites lower than EU organic wine production requirements.
