ecoVINO says: This wonderful red wine is a powerful and medium-to-full bodied Super Tuscan from the Maremma DOC wine-making region in Tuscany. The wine is produced from a blend of Sangiovese (65%) and Syrah (35%) grapes and although high in alcohol has great balance and structure. The wine is very drinkable now, but will further improve and evolve over the next few years (best to drink before 2027).
Aroma: Pronounced bold aromas of luscious ripe red fruits - particularly cherry, plum and raspberry – and black liquorice, with herbaceous notes (particularly tomato leaf) and subtle hints of white pepper.
Taste: Dry with medium-to-high acidity, high alcohol and medium-to-high tannins. Medium-to-full bodied with a lovely smooth and long finish. Opens with prominent flavours of fresh tangy red fruits – particularly cherry, plum, cranberry and raspberry – and closes with some slightly bitter herbaceous and vegetal notes.
Open: To fully appreciate the complexity of the wine, best to open at least 1 hour before service.
Service temperature: Low room temperature (16 to 18 degrees Celsius).
Food pairing: Best paired in combination with structured and savoury dishes. This wine is perfect when paired with hearty and richly flavoured dishes and will also pair really well with strongly spiced Asian foods.
Wine-making process: Grapes are carefully handpicked in the first two weeks of September. Each grape varietal is separately macerated in stainless steel tanks at a controlled temperature. After fermentation, the wine is blended together. Wine is then transferred to small oak barrels, where maturation continues to take place for a further 12 months prior to bottling. Refinement continues inside the bottle.
