ecoVINO says: This is a really interesting Italian interpretation of a classic ‘Bordeaux style’ wine from the Le Tende winery. This vintage comprises of a blend of around 80% Cabernet Sauvignon grapes and 20% Merlot grapes. This medium-to-full bodied velvety red wine is very well-balanced and has a lovely intensity and structure. Although this wine is ready to drink now, a lengthy decant before serving is highly recommended. If stored properly, this wine should develop further until at least 2026. This is a great wine to introduce to lovers of Bordeaux wines at your next dinner party.
Aroma: Pronounced primary aromas of black fruits – particularly blackcurrant, blackberry and black cherry - with overtones of clove and black pepper. Secondary and tertiary aromas include dried fruit, oak, smoke and cedar with hints of undergrowth and brambles.
Taste: Dry with medium-to-high acidity and medium tannins. Medium-to-full bodied with high alcohol and a smooth finish. Opens with pronounced black fruit flavours - particularly slightly unripe blackcurrant, blackberry and black cherry. Secondary and tertiary flavours include delightful herbaceous notes – particularly grass and green bell pepper – with hints of cacao, charred wood and forest floor.
Open: To fully appreciate the complexity of the wine, best to decant at least 2 hours before service.
Service temperature: Low room temperature (16 to 18 degrees Celsius).
Food pairing: Best paired in combination with structured and savoury dishes. This red wine also pairs well with stronger flavours and spicy Asian dishes.
Wine-making process: Grapes are handpicked at the end of October. Each grape varietal is separately macerated in stainless steel tanks for 15 to 20 days at a controlled temperature. After fermentation, the wine is blended together. Wine is then transferred to small oak barrels, where maturation continues to take place for a further 12 months. Refinement continues for a further 4 months inside the bottle.
