ecoVINO says: This wonderfully well-structured dry red wine has a lovely herbaceous flavour and is really soft on the palate. The grape varietals used in the winemaking process of this wine create a blend unique to the Villa Merighi winery. This delightful blend of grapes provide this delicious red wine with fantastic balance, intensity and complexity. Best to drink now (or before 2024) alongside a meal with your family and friends.
Aroma: Pronounced aromas of black fruits - particularly blackberry, cherry and plum - with subtle hints of white pepper and dark cacao.
Taste: Dry with medium-to-high acidity. Medium-bodied with medium alcohol and finish. Opens with pronounced herbaceous flavours - particularly green bell pepper, vine stems and tomato leaves - with overtones of black fruit, cranberry and caramel.
Open: To fully appreciate the complexity of the wine, best to decant 1 hour before service.
Service temperature: Low room temperature (16 to 18 degrees Celsius).
Food pairing: Best paired in combination with structured and savoury dishes. This wine also pairs well with strong flavours and spicy Asian foods.
Winemaking process: Grapes are handpicked at optimal ripeness. Marzemino and Corvina grapes are dried naturally for 1 month before the winemaking process begins. Each grape varietal is separately macerated in stainless steel tanks for 10 days and continues malolactic fermentation at controlled temperatures of between 22 to 25 degrees Celsius. After fermentation, wine is blended together. Maturation continues in stainless steel tanks prior to bottling. Refinement continues inside the bottle for a further 12 months.
